Liam Paterson

Liam turns frontline pressure into workable systems. His hospitality career has included Ballenisles in Florida, Fiddler’s Elbow in New Jersey, Ireland’s Rose Hotel, the Michelin-recognised Tayberry and Sandbanks Brasserie.

As an owner of Don Padrino and founder of Tay Together, he brings operational detail, business development, partnerships and customer journeys into every Empire33 build.

Patric “Paddy” Lochi

Paddy brings more than 25 years of hospitality and business experience. He owns Don Michele and co-owns and operates Don Padrino, with wider experience across finance, property development and business ownership.

A former Dundee Stars professional athlete, he brings a commercially grounded view, strong local relationships and the discipline to turn ideas into real-world ventures.
